Stuffed Peppers

Here’s the bell peppers fresh from the garden. the other peppers are sweet bananas.

Here’s the onion and pepper chunks sauteing. This is the hamburger and diced tomatoes added.

Here the cheese is mixed in. Leslie is now stuffing the peppers.

Hot out of the oven and on to the table.

 

Stuffed Peppers Recipe

1 lb ground beef

2 large onions

1 clove garlic

3 tomatoes – diced

6 peppers – preferable red

1 1/2 cup cheddar cheese

2-3 Tbs. olive oil

Remove peppers stems.  Place several tablespoons of olive oil in baking dish and set uncut side of peppers on oil.  Saute beef and set aside.  Saute onion and pepper pieces from tops, when tender add minced garlic and cook for an additional minute.  Add diced tomatoes and meat and simmer until half the liquid from tomatoes is rendered down. Remove from heat and add grated cheddar cheese.  Spoon meat mixture into peppers and bake at 374 degrees for 45-60 minutes.  When peppers are tender top with grated cheddar cheese and bake until cheese is golden brown.
